6 days in Basque country - a
food lover’s paradise. Unpack and relax,
you stay here for a week. And we have a wide range
of cultural explorations; your experience will
be a journey of tastes. We feature a ‘Sample
Itinerary’ which offers a suggested culinary
program. Modifications to the program are easy
enough as we’re flexible. Each outing is
of course subject to weather, availability and
whether or not it compliments your interests.
Rest assured that an exceptional week is planned
to highlight the very best of the region. You
will enjoy fabulous wine tastings, informative
guided tours, markets and delicious gourmet food.

Day 1
Depart Saturday.
Day 2 (overnight)
Sunday
Arrival Sunday morning at the Pamplona Airport where
you’ll be met and whisked away to Basa Kabi
Hotel in the small town of Leitza. After a tasty
light lunch you will have the afternoon to yourself
with free time to unpack & rest. Tonight savour
a welcome dinner at the rustic Basa Kabi Hotel.

Day 3
(overnight)
Monday
Wake up to your buffet breakfast comprised of
coffee, teas, juices, yoghurts, cereals, fruits,
pastries and freshly baked breads served at 8.30am.
Your morning cookery class at Basa Kabi with seasoned
Chef Alex Mugica takes 2 1/2 hours, you will of
course use only the freshest of ingredients. Your
class is followed by lunch of the dishes that
you prepared & will be served with Red Crianza
wine from Navarra and La Rioja.
Your afternoon is free to relax or to visit to
the idyllic white spruce forest of Leitzalarrea.
Tonight’s dinner is at a cider house located
30 minutes away. These are old country farmhouses
where apples are harvested and cider is made in
the traditional method. The apples are harvested
in October and in January; they are then fermented
in huge wooden vats where they remain until April,
when they’re bottled. Until recently the
cider was consumed only by the producer and neighbours,
but luckily now it’s available to the public.
The cider is served directly from the vats and
is accompanied by dishes typical of this area,
salt cod, grilled t-bone steaks, local sheep’s
milk cheese, walnuts and quince jelly all prepared
in front of the guests. One can drink as much
cider as one wishes, it’s on tap!

Day 4 (overnight)
Tuesday
Buffet Breakfast
Today’s excursion adventure is to a winery,
where you’ll have a tour and tasting followed
by lunch.
This afternoon’s second cookery class is
at Basa Kabi.
You’ll savour a traditional dinner of talos
y castañada (corn cakes and chestnuts)
at Basa Kabi. The corn cakes mixture is prepared
in the cookery class and afterwards they are eaten
with chorizo (traditional sausage) and cheeses
in the old fashioned way. The castañada
is a traditional way of roasting wild chestnuts.

Day 5 (overnight)
Wednesday
Buffet Breakfast
Take a trip to the popular local farmers’
market at Ordizia and the fisherman’s market
at La Brecha (Donostia). You’ll have a lunch
of ‘pinchos’ in the bars in the Old
Quarter of Donostia. Pinchos is the basque word
for tapas or small portions of savoury dishes
usually served on bread and eaten whilst standing
at the bar accompanied by wine served by the glass.
Have your afternoon free to explore Donostia.
Dinner hosted by the Gastronomic Society in Donostia.

Thursday
Buffet Breakfast
This morning’s cookery class is your last
one at Basa Kabi, lunch of course consists of
the delicious dishes that you prepared earlier
that morning.
Take your free afternoon to explore the countryside
or visit the local cheese maker.

Day 7 (overnight)
Friday
Buffet Breakfast
This morning you’ll visit Zarautz, a small
seaside town with beautiful beaches, Karlos Arguiñano,
a famous TV Chef will also greet you. You’ll
have a lunch of tasty anchovy appetizers in Getaria,
a small fishing port, at the Restaurant Iríbar.
Lunch will be served in the Restaurant Belaústegi
and complimented with entertainment from the Chef-owner
of the restaurant (he is a well-known actor-singer).
The performance will share local traditions and
customs – it’s sure to be entertaining
(and definitely not touristy).
Watch a traditional game of pelota vasca (Basque
handball) to get a real flavour of local sports.

Please note: The hotel and restaurant will not be open

Not Included:
Although you of course eat the dishes that you prepare
in the cookery classes, the food costs are subject to
seasonal prices and are therefore not included in the
program cost. The separate cost for the week’s
food is approximately 30 Euro ($50 CAD) per person.
