Tomato and Onion Salad
Serves 4-6
2 lbs firm ripe tomatoes, deseeded and diced into small cubes
2 oz flat-leaf parsley, finely chopped
2 medium red onions, very finely chopped
1 tsp ground cumin
1 tsp finely ground fresh black pepper
Juice of 2 lemons (or to taste)
5 tsp argan oil
Sea salt
Place the diced tomatoes, chopped parsley and onions in a salad bowl. Add the spices, lemon juice, oil and sea salt to taste and toss well together. Taste and adjust the seasoning if necessary. Serve at room temperature.
Chef's Note:
Argan oil is an exquisite cooking and flavouring oil made from the fruit of the Argan Tree harvested in the wilds of Southern Morocco and is gaining kudos from chefs and foodies.
