Tagine Djaje Bi Batata Hloua

Chicken Tagine with Sweet Potatoes

1 whole chicken (2 kg) 

1 large onion chopped 

2 large tomatoes finely chopped 

5 tbsp olive oil    

1 tbsp chopped parsley

2 cloves of garlic chopped

Spices

1 tsp pepper

1 tsp ginger

1 tsp cinnamon

Method

Cut the chicken in 8 pieces and saute them with the spices and olive oil.  Peel and slice the potatoes, lay them over the chicken.  Add the tomatoes, parsley and the garlic.  Cook for 1 hour slowly and serve.
