Exotic Morocco Culinary Vacation

Harira

Chickpea Soup, a national favourite.

4 litres water

1 kg tomatos

2 tbsp tomato puree

50 g lentils

100 g fresh chickpeas without skin  

40 g rice 

200 g flour

2 onions 

200 g leg of lamb

4 tbsp olive oil     

4 tbsp chopped parsley and coriander

Spices

1 tsp pepper 

1 tsp cumin

1 tsp table salt

Method

Grate the onions and mix in tomatoes.  Put all the ingredients in a pan except for the rice and the flour

Leave to cook slowly for 30 mins.  Add the rice and leave to cook for 5 mins.  Mix the flour in some stock, then add it to the pot. Leave to cook for a further 10 mins.
